Chapter 3 AHDN

Roadside Potatoes (Grandmother's recipe)


1 12 oz. Package of frozen hash brown potatoes
1 1/2 cup of half and half
1/4 cup of butter
1/2 tsp. salt
1/4 cup grated cheese
1/2 green onions

Use 8X8 pan

Heat butter and cream until melted. Add salt. Put potatoes in pan and pour cream mixture over. Sprinkle with cheese and green onion and bake.

Bake 325 degrees

Cook 25-30 minutes.

 
Chapter 2 AHDN

Creamy Spinach (My mother's recipe)

2 pounds fresh spinach, washed and tough stems removed
1 cup of whipping cream
3/4 cup of grated Parmesan cheese
1 cube of butter
1 egg

Bring a pot of salted water to a boil over high heat. Add the spinach and cook for 2 minutes. Drain in a fine mesh strainer, pressing with a large spoon to release as much water as possible. Finely chop and set aside. 

Alfredo sauce:

In one big pot, whip 1 cup of whipping cream until it holds together (not as thick as whip cream). Add 3/4 cup of grated Parmesan cheese. In saucepan melt 1 cube of butter. Let it cool for 5-10 minutes. The Add one beaten egg to cream mixture then fold in butter.

Then mix it together with the spinach and it is ready to serve!!!

Chicken Casserole Mississippi (Got this recipe from my mother's friend)


3 1/2 Pounds of skinless, boneless chicken breasts
1 small onion
1 teaspoon seasoning salt
1 (8 oz) package of wide egg noodles
1 can of cream of mushroom soup
1 can of cream of chicken soup
2 Cups Ritz crackers, crushed
1/2 cup melted butter
7 oz sour cream

Preheat oven to 350 degrees F

Cut the chicken into bite size pieces. In a large skillet over medium heat, saute the chicken and the onion until chicken is cooked. Prepare egg noodles according to package directions. In a casserole dish, combine the chicken, onion, soups, and noodles. Mix this together well.

Crush the crackers in a medium bowl. Add the butter and sour cream mixing thoroughly.  Spread over chicken mixture. Bake at 350 degree for 30 minutes, or the top is golden brown. Serves 6-8.
